It's the chicken and egg problem. People don't move to Mastodon because there are less users and there are less users because people don't move.
However if someone consumes less social media because there are "less people making noise", I consider that a good thing.
Any closed-source software is a potential privacy threat. You are always at the mercy of big tech in that case. If the product is free, you are the product

EDIT: I suppose it should be alright if you mention in your privacy policy that if you interact with other instances their privacy policies apply as well.
