Linux is a family of open source Unix-like operating systems based on the Linux kernel, an operating system kernel first released on September 17, 1991 by Linus Torvalds. Linux is typically packaged in a Linux distribution (or distro for short).
Distributions include the Linux kernel and supporting system software and libraries, many of which are provided by the GNU Project. Many Linux distributions use the word "Linux" in their name, but the Free Software Foundation uses the name GNU/Linux to emphasize the importance of GNU software, causing some controversy.

Anything can be done in the GUI, specifically often a lot of things not worth doing. The question is if it makes sense doing something in a GUI and if (since we're talking about FOSS here) someone is willing to spend their valuable time developing an app they won't use themselves, that does the same thing but worse and in a GUI.
Also this was about Linux beginners, not this mythical "basic user" that supposedly doesn't care enough to learn, but enough they want to switch away from whatever crap they were served by Apple or Microsoft.
