Have you tried elite dangerous? It's pretty much in the sweet spot of high realism while not being overly complex (once you get the hang of it. High learning curve).

If you buy a thousand dollar ship you get a second shop that opens with ten thousand dollar ships. I wish I was kidding.

I literally did everything there is to do in Elite, bar maybe the thargoids. Ultimately don't have anyone to play with since my friend group bounced off it. I'm one of those freaks that fly 99% in FA off.
