You're not alone. This is actually my recommendation to anyone who hasn't played it, when the topic of Tunic comes up: Just turn on No-Fail mode for the bosses. They're all horribly unbalanced, and not worth your effort. And they're absolutely NOT what makes the game great.

I disagree. The bosses were fun, and I dont think they were super difficult either. You just need to make good use of your tools.

I did find that a bit of a "fuck you" to a lot of players. The entire rest of the game's combat is not even half as difficult as the final boss.
Use ALL the stuff that increases your damage when your health is low. I don't even use those in Dark Souls, but in Tunic it made a HUGE difference.
I found the gauntlet challenge to get the blink dash ability way harder than the final boss
You lasted longer than I did on the boss. After about 1 week of banging my head against a wall, I turned on the cheat to not die. ¯\_(ツ)_/¯
Oh well. It was still a fun a game and I'm not mad I had to cheat to beat it.
Just more time to enjoy the banger soundtrack.

You don't need to beat the final boss to beat the game. In fact, you don't get the proper ending if you do beat the boss.

Discussion
I contemplated not commenting at all, but OP is clearly going through it with this boss and will probably be very disappointed after eventually getting through it and realising it was all for nothing. It would save them a lot of time and energy to just abandon the boss and dive in to the manual, which I think is far and away the best part of the game. That's what I did and I'm so glad. I also don't know how to convey this to OP without telling them, so it's buried in spoiler tags which they can choose to read if they want.
