I think the idea is rather, that read only container - as the name implies - only read and drive write. Since SD cards aren't exactly great at being written to often, that could increase the lifetime of the SD card.

Are you married to SBCs? There are dirt cheap, pretty powerful and small thin clients floating around in ebay. HP G3 mini for example.
It's not a copyright problem. You get demonitized for saying "suicide" for example. They want an artificial happy place where no bad things happen and we can all have fun watching ads forever.

I found it fairly difficult to set up nixos on one of my machines, because it simply didn't ship with a certain, relatively common kernel module/user space app. I also couldn't find a usable workaround (only compiling my own kernel on every update, which is not exactly my kind of fun).
So, you might want to try that out first.
