For Lemmy usage my preferred approach is always sorting by all and blocking communities (and instances) I don't want to see instead of subscribing to the ones I do want to see. This way you get more content and dont miss new sublemmies! :)

I recently was in the same situation, so I saved everything to my cloud and just installed the Linux distro of my choice (opensuse tumbleweed), completely replacing windows, knowing I could reinstall windows later if really needed. Turned out I didn't need it and am glad I don't have to bother with deleting it now.
I'm extremely impressed with how far Linux has come
