All of them still work. I’m running Yuzu as my daily still.
Eden is a more advanced fork of Yuzu with better compatibility. No reason to keep using Yuzu IMO.
Eden runs games slower than Yuzu, though. I don't get the same framerate in, say, Mario Kart 8 Deluxe on Eden like I had with Yuzu.

Since the switch 2 is an entirely different console, a lot of work will need to be done to emulate it. I would wait several years.
Thought as much, just with it beint such a minor update I thought maybe in trms of architecure it was much the same
If you want to keep an eye on Switch 2 hacking progress go to the GBATemp forums.
You'll quickly find out that the Switch 2 is almost impossible to get into. ^^;
