That's the reason why I bought a 13 despite coming from multiple touch-screen laptops
The 13 platform seems like the overall choice. The 16 has good long term prospects if you like the form factor, but the options are limited because it's newer, and the expansion port makes it a little more difficult to work with. The 13 has been around for a long enough time that you can even slap a risc board in it. If you have problems with it after warranty you have plenty of options to get yourself up and running again without having to shell out a lot of money.
The 12 seems promising and interesting (the idea of a non-Microsoft surface-like computer that isn't landfill bound is very intriguing IMO) but a bit limited. IIRC, it doesn't even have two RAM slots. It's likely worth it to let the platform develop a little before buying one.
